The mooncake's origins are not small, as it was once used as food by Zhang Xianzhong, a peasant insurgent during the Ming Dynasty.
Towards the end of the Ming Dynasty, Zhang Xianzhong led an insurgent force into Sichuan. Zhang Xianzhong adopted the strategy of "using walking to control the enemy", and was able to travel more than 300 miles in a day and night, with rapid mobility, often causing the official army to lose sight of the enemy, and being overwhelmed by the enemy on their backs. However, in this way, there is a problem in the supply of food. The soldiers were often too late to bury their pots and pans, and had to move to the next location, and starvation was a common occurrence.
Sichuan people see the volunteer soldiers starving, very distressed. At that time, there was a Wang Ji pastry store in Linjiang, Kaifeng County, Sichuan. Mr. Wang made a batch of biscuits filled with icing sugar and other fillings and gave them to the volunteers. This kind of cake is fragrant and sweet, easy to carry, very popular with the volunteers.
Over time, these cakes, which were once used as food for Zhang Xianzhong's army, evolved into mooncakes for the Mid-Autumn Festival. People also gave the mooncake a catchy name based on the fact that it had an icing sugar filling: "Ice-thin mooncake."
To this day, there is a nursery rhyme circulating in Linjiang Township, Kaixian County, which says, "God remembers in the river, and the ice is thin enough to send the righteous army; every year at Mid-Autumn Festival, every family has a toothpaste." This old nursery rhyme reflects a local legend that has been passed down for a long time, revealing to us the origin of the ice-thin mooncake.
The raw materials used in the mooncakes and the production process are very delicate.
The main ingredient is refined white flour, supplemented by fat, cooked sesame, rock sugar, white sugar, peanuts, spices, caramel and various candied fruits. In the production process, there are 7 major processes and 11 minor processes.
The first is to go to the sesame seed skin, will be purchased from the rural sesame seeds, soaked in water for about 1 hour, stirring and then rinsed with water to remove the skin, fishing must be the same day after the sun, in order to prevent germination, mold.
Subsequently, the production of caramel, the first rice steamed rice, low-temperature fermentation, the sweet water will be poured into the cauldron boiled into caramel.
Next is the ingredients for the filling, the fat, cooked flour, peanut flour, sesame flour and a variety of candied fruits according to a certain ratio, mixing and stirring well, one by one, pinched into a four money and five big small ball, ready for the filling.
The refined white flour, together with a certain amount of caramel and a little fat and water, mix well together, and make the right wet and dry dough, in order to become a cake after the fluffy and not hard, add a certain amount of water and alkali in the ingredient, and then make a sheet of three money and five weight of the round skin.
