Seasoning: edible oil, salt, curry powder
1. Heat the pot and add appropriate amount of olive oil. Add diced potatoes and stir-fry. Stir-fry until the surface of the potatoes turns slightly brown.
2. Add carrots and stir-fry for a few times. Take out the fried carrots. 3. Add onions and diced chicken and stir-fry. When the chicken changes color, add the fried carrots and potatoes. 4. Pour in hot water that covers all the ingredients, bring to a boil over high heat, and simmer over low heat for 10 minutes.
5. Add the curry cubes and stir gently with a spatula until the curry cubes melt. Add coconut milk and mix well.
6. Add appropriate amount of salt to taste, cook over low heat until the soup thickens, turn off the heat and remove from the pot. Just pour the prepared curry over the rice.
