2 Method:
1. Clean the pig skin and put it into a pot of water. After boiling over high heat, reduce to low heat and cook the pork skin until it becomes thick and discolored. Take out the cooked pork skin, let it cool and then use a knife to scrape off the fat inside the skin.
2. Use a knife to cut the cleaned pigskin into 5 cm wide strips, thread them with thread and hang them in a ventilated and cool place to dry.
3. Generally, the pig skin will be dry after cooling for about 7 days, and the pig skin will be dry enough to be broken by hand.
4. Pour vegetable oil into the pot. When the oil is 70% hot, add dried pork skin and fry over low heat until the pig skin becomes fluffy and turns yellow. Remove the fried pork skin and drain the oil and set aside.
5. Boil the fried pork skin in a pot of boiling water and then soak it for about 6 hours. The pig skin will become soft, swollen and elastic.
6. The soaked fried pork skin can be served cold, cooked in soup, or cooked with other vegetables.

Fried pig skin is not greasy. My understanding is that the oil residue is not greasy when we refining lard; the fat in the pig skin is not greasy after oil It will ooze out after frying. The fried pork skin will become smooth and elastic after being boiled in boiling water and soaked for several hours.
1. Boiled pig skin can easily scrape off the fat inside.
2. The hot oil in the pot is easy to splash when frying dried pork rinds, so pay attention to safety.
3. After boiling the fried pork skin in water, soak it for about 6 hours to make it fluffy and elastic.
4. Fried pork skin should be cooked on low heat and the oil temperature should not be high, otherwise the fried pig skin will have large pores and low elasticity after soaking
