Jiaxing Meat Rice Dumplings Practice
1. Salted Duck Eggs 20 cleaned, all stoned to collect the white of the egg into a large container for another use. The salted egg yolk will be taken out and cut in half.
2. Cut 1 kilogram of pork into pieces and marinate for 3-4 hours in 3 teaspoons of soy sauce, a pinch of salt, 1/2 teaspoon of sugar, 1/2 teaspoon of chicken broth, 2 teaspoons of cooking wine, 1 teaspoon of peanut oil, and 1 teaspoon of black sesame seeds.
3. Steam a large piece of Jinhua ham, remove the bone, cut the ham meat into cubes, add 50g rock sugar and steam for 20 minutes. Remove and let cool.
