Sesame oil can be used to make fried noodles
Ingredients: 100 grams of flour, 60 grams of water, 1 gram of salt, 20 ml of peanut oil, 5 ml of sesame oil
Seasoning: 5 ml of balsamic vinegar, appropriate amount of chili powder, 1 shallot, 2 garlic, 1 rapeseed
Steps:
1. First prepare the dough for noodles. Mix flour, water and salt together and knead into a smooth dough
2. Roll the dough into strips and divide it evenly into 10 dough pieces with a silicone scraper. It's okay if the size is not uniform. Friendly reminder, never use a knife to cut on the silicone pad. I will not be responsible for it if it breaks.
3. Roll the dough into a round shape and make it into a cylinder, flatten it, and then roll it out into an oval. You don’t need to roll it too thin, and then press it in the middle with chopsticks to create an oval. The indentation is so that when you pull it apart, it can be easily separated into two pieces from the middle to avoid the noodles being too wide.
4. Brush both sides of the dough with a thin layer of oil to prevent them from sticking together, place them on a plate, cover with plastic wrap to prevent them from drying out, and then let them rise for more than 1 hour.
5. When the noodles are proofing, prepare the auxiliary ingredients. Cut the garlic into minced pieces and the shallots into minced pieces.
6. Prepare some chili powder
7. When preparing to cook noodles, first add water to the soup pot and boil it. After the dough has risen, it is easy to pull it apart. Use both hands to pull it long and thin, then separate it from the middle into two noodles, and then put it into the pot to cook.
8. Then pull the other noodles and cook them together
9. Take out the cooked noodles and put them in a bowl.
10. Place minced green onion, minced garlic and chili powder on top, then top with light soy sauce.
11. Add peanut oil and some sesame oil to the wok, heat it up and pour it on the surface, and add vinegar when it is time to pour it
