Purely handmade cold skin
Main ingredients
300g ordinary flour, appropriate amount of water, appropriate amount of salt, appropriate amount of garlic, 1 light soy sauce, appropriate amount of vinegar, appropriate amount of cucumber, 1 peanut, 50g appropriate amount of sesame seeds Appropriate amount of sesame oil, appropriate amount of MSG/chicken essence, appropriate amount of sesame paste
Steps of making handmade cold skin
1. Add flour to water and knead into dough. A little harder. Wake up for 15 to 30 minutes.
2. Add water to the rested dough to cover one-third of the dough, and start washing the dough. When the water becomes very thick and turbid, pour the thick and turbid water into a clean basin, and then continue to wash the dough in the dough basin with clean water.
3. Until no turbid water can be washed out when adding clean water. The remaining dough is the washed gluten. When the gluten is cooked in a pot, it usually takes about 20 minutes to boil the water and steam it.
4. Place the washed water in the refrigerator and let it settle for 6 to 8 hours, preferably overnight. Then pour away the water on top, making sure to skim the water clean and leave the sediment slurry. Mix well and set aside.
5. Boil the water, brush a thin layer of oil on the Liangpi Luo Gong, pour an appropriate amount of batter, shake evenly, put it into a pot of boiling water, cover and steam for 3 to 4 minutes. Pick up the gong and put it in a basin of cold water to cool down, then peel off the skin.
6. Place the peeled dough into a plate or on a cutting board for cooking cooked food, and brush a layer of oil on the surface of the cold dough to prevent it from sticking.
7. Peel and wash the garlic, smash it into pieces, put it into a bowl, add an appropriate amount of salt, MSG/chicken essence, pour in an appropriate amount and let it cool down. Cut the cold skin into strips, cut the cucumber into shreds, cut the steamed gluten into small pieces, roast or fry the peanuts, put them into a bowl and pour the mixed garlic juice, vinegar, light soy sauce, and sesame oil. Mix the sesame sauce (you can omit it if you don’t like sesame sauce) and sprinkle with the fried sesame seeds. Friends who like cilantro can sprinkle with cilantro. That's it.
Tips
1. Liangpi gongs are available on Taobao. If you don’t have Liangpi gongs, you can use stainless steel plates instead. The gong I used is 26cm in diameter. Use a plastic spoon and a spoonful and a half of flour slurry to steam the cold skin, which is neither thin nor thick. Use other sizes of Liangpi Gong and slowly explore and master it yourself.
2. You can add any cold dishes you like to the prepared cold skin. Friends who like spicy food can add chili oil directly.
