Exercise:
1. Slice squid, (from the lower right corner, the dense diagonal strips are cut up, and then from the lower left corner, it will be in a grid shape);
2. Medium fire, put the squid into the pot after heating the pot, and add some cooking wine and salt after the squid is naturally rolled up. After the pot is simmered, turn off the heat-releasing pot and add the green pepper to stir fry;
3. Add the fried squid, stir fry and add appropriate amount of water, and the green pepper can be cut off.
2. Fresh squid with scallion oil
Raw materials:
Squid, chives, ginger slices, soy sauce.
Exercise:
1. Cut the squid into pieces, put them in a plate, sprinkle with a little shredded ginger and drizzle with a little Haitian soy sauce;
2. Shred ginger and leek and steam in boiling water for 5-7 minutes;
3. Pour off the excess juice to remove the shredded ginger, then pour a little Haitian light soy sauce on the steamed squid, sprinkle a proper amount of shredded chives, and finally pour a little hot oil.
3. Crispy fried squid rings
Raw materials:
Squid, corn starch, eggs, bread crumbs, salt, pepper, cooking wine, oil.
Exercise:
1. Squid rings are thawed. Tear off the skin, clean it, and add a proper amount of salt, pepper and cooking wine for pickling 15 minutes or more;
2. Beat the eggs, stir them evenly, put the raw flour and bread crumbs in a container for later use, roll the squid rings in the released flour, dip them in the egg liquid, and finally roll them in the bread crumbs;
3. Put the oil in the pot, heat it to 60% to 70%, add the squid ring, turn to low heat, fry until golden brown, take it out, put it on kitchen paper, and suck some oil.
Cumin squid beard
Raw materials:
Squid beard, garlic moss, onion, coriander, ginger garlic, cumin powder, onion, pepper, dried Chili, soy sauce, sugar, vinegar, Chili oil, chicken essence and white sesame.
Exercise:
1. Squid should be washed. You can gouge out your eyes, blanch them with boiling water, remove them after discoloration, cut them into pieces, wash garlic moss, cut them into small pieces, about 7 mm, and cut onions into small pieces. Slice ginger and garlic, cut coriander and shallot into small pieces;
2. Heat oil in a hot pot, saute garlic moss and onion, add a little salt, stir fry and remove;
3. Put oil in a hot pan, add squid whiskers, ginger and garlic slices, pepper granules and dried peppers and stir fry. Add a little salt, soy sauce and cumin powder and stir-fry until fragrant;
4. Don't fry for too long. Pour in freshly fried garlic moss and onion, add a little sugar, a little vinegar and cumin powder, and make your own Chili oil. Stir-fry evenly, turn off the fire, cover the pot and stew for 30 seconds, change the fire to prepare for cooking, add onion coriander, a little chicken essence, and sprinkle some white sesame seeds after frying.
