Is good ginger, southern ginger, and red ginger, pretty much the same?
The difference between Liang Jiang, Sha Jiang, Nan Jiang is mainly in the leaves and roots. Flowering period from April to October. Sage is a perennial persistent herb. Tuberous rhizomes, solitary or several connected, light green or greenish-white, aromatic; roots stout. No above-ground stems. Leaves 2, several sessile, lying flat on the ground; orbicular or broadly ovate, 8-15 cm long, 5-12 cm wide, apex acute or subobtuse. Base broadly cuneate or rounded, thin, green, sometimes with purple rendering on leaf margins and tips; leaf veins 10-12; petiole decurrent into a sheath, 1-5 cm long. Spikes arising from leaf sheaths, with 4 to 12 flowers, fragrant; bracts lanceolate, green, ca. 2.5 cm, calyx as long as bracts; corolla tube slender, 2.5 to 3 cm; corolla lobes narrowly lanceolate, white. 1.2-1.5 cm; labellum broad, ca. 2.5 cm in diam., parted at middle, each of 2 lobes slightly concave-white at tip, throat purplish-red; lateral staminodes petaloid, obovate, white, ca. 1.2 cm; connectives broad, apically contiguous with square corolla tube; ovary inferior, 3-loculed, style elongate, base with two slender rod-like appendages, stigma discoid, ciliate. Fruit a capsule. Flowering period August to September. The appearance of ginger is similar to tree roots, darker in color and larger in size, the skin of ginger is whitish in color, and the ginger buds are reddish. Native to the south of mainland China, now widely cultivated in Southeast Asia. Utilized parts: underground rhizome (including young and old stems). Aroma: Tastes spicy with a sweet flavor similar to cinnamon, but with a pungent taste.
