In the early stage of pickles, nitrate and inherent amine compounds in vegetables produced nitrite under the action of bacteria, which led to higher and higher nitrite content in pickles. With the increase of the number of lactic acid bacteria, nitrite began to be decomposed by them, so the nitrite content in pickles became lower and lower. Therefore, the nitrite content in pickles changed parabolically with time.
