1. Soak Hericium erinaceus in warm water.
2. Rinse the front and back sides of the pork belly with clean water, then pour a little vinegar, add flour and knead it, it can be washed very clean.
3. Boil the washed pork belly with water for about 5 minutes to remove the fishy smell and grease. If you have a pressure cooker at home, press it for about 10 minutes to shorten the soup cooking time.
4. Squeeze out the water from Hericium and tear it into small pieces, cut the pork belly into strips, put it in a rice cooker, add lotus seeds, red dates and rock sugar.
5. Add water to the rice cooker to cover the ingredients, add soy sauce and rice wine, and stir evenly.
6. Press the soup button and you can sit back and wait.
7. After cooking, put it into a separate bowl and add salt to taste.
