Ingredients: (two people) prawns or 5 prawns, with appropriate amount of water.
Seasoning: 1 tsp pepper, 1 tsp star anise, 1/2 tsp cooking wine, 1 tsp white wine, 1/2 tsp white sugar and a little salt.

1. Wash prawns, put them on the chopping board, and cut off sharp thorns on their heads with scissors.
2. Peel off the sharp shell of the shrimp tail by hand.
3. Pick out the whole shrimp line between the second and third sections of the shrimp back with a toothpick.
4. Finally, cut off the long whiskers and the shrimp will be processed.
5. Boil a proper amount of water in a boiling pot, and add pepper and star anise to taste.
6. Continue to pour wine and white wine, or rice wine.
7. Add sugar and a little salt.
8. After the water boils again, add prawns and cook.
9. Cook on medium heat for about 7- 10 minutes. Pour the prawns and the soup in the pot into a clean container and put it in the fresh-keeping room of the refrigerator for more than 3 hours.

Food tips:
1. Setting of baking time: The actual temperature of the oven is different from the size of prawns. When setting the oven baking time, first set 15 minutes, and then observe it several times. If the meat under the shrimp shell has shrunk obviously, stop baking, otherwise extend the baking time until the shrimp meat shrinks to about 70% of the internal space of the shrimp shell.
2. Treatment before the shrimp is put into the pot: cut off the spikes on the shrimp head and the sharp shells on the shrimp tail to prevent the fingers from pricking when eating. Especially during the World Cup, my eyes were attracted by the tense events on TV, and I didn't have time to stare at the shrimp in my hand. Therefore, before making this snack, I have to thoroughly dispose of the sharp parts on the shrimp shells.
Step 9, the cooked shrimp needs to be soaked in the original soup to make the shrimp more tasty. If time is tight, the soaking time can also be shortened accordingly.
