Water chestnut is eaten raw, with slightly sweet taste and crisp and tender meat. It is ok to eat it raw. It is suggested that water chestnut should be soaked in salt water for half an hour before eating.
Water chestnut is generally planted in wet mud land with mild climate, such as ponds and swamps. The climate should not be too cold, preferably 25 degrees Celsius to 36 degrees Celsius. The water depth should be 60 cm.

Soak water chestnut for about half an hour, clean the dirt on the surface of water chestnut, put it in a pot, pour in water (the amount of water just exceeds that of water chestnut), and boil.
After the water is boiled, pour in the salt, add the ginger slices, cover the pot, and cook for about 15 minutes. After cooking, take out the drained water and break it by hand or cut it with a knife.
