Carrot Ribs Soup Steps
Steps 1
Ribs cut into chunks, wash and drain. Blanch in boiling water for 1 minute, remove and drain. (I dumped the water directly and didn't keep it.)
Step 2
Cut green onion into pieces and slice ginger. In a large half pot of water, add green onion, ginger and pork ribs together in cold water (using fresh water here). Bring to a boil over high heat! (I purposely put a lot of water in order to skim the foam when the pot boils later.)
Step 3
It's recommended to start skimming when the pot is almost boiling so that the sides of the pot are cleaner. And if there is a lot of water, there will be less pressure to skim for fear of losing the soup. In this way, as shown in the picture, the foam on the skimming is very clean, the soup looks refreshing. When the pot boils, put in the appropriate amount of cooking wine (deodorization), vinegar (conducive to the flow of calcium in the ribs). Turn to medium-low heat and simmer for 1 hour.
Step 4
Peel the carrots and cut into chunks, put a small amount of oil in a frying pan, heat it up and put the carrot chunks in to stir-fry until browned. (carrots on the water, the beauty of the cook remember to pot lid in front of the chest, in order to prevent being splashed with oil Oh ~)
Step 5
Get a grip on the time, stir-fried carrots and other ribs stewed to 1 hour under the pot. Continue to simmer! About 20-30 minutes you can turn off the fire. If you want to eat more tender ribs, you can continue to simmer.
Step 6
After removing the pot from the pot, add salt to the bowl individually, and you have a bowl of flavorful rib soup! ^_^
