First of all, explain what Ai Yu is:
Ai Yu belongs to Ficus of Moraceae, a subspecies endemic to Taiwan Province, which is dioecious. Wild distribution can range from flat land to mountainous areas above 2000 meters above sea level. At present, it is mainly distributed in the middle and low altitude areas with an altitude of1200-1900 m. It is a kind of liana endemic to Taiwan Province Province, often twining on rocks or trees, dioecious, and its main fruiting period is from August to 65438+February. Female fruit is rich in pectin and pectinesterase, which can be processed into Ayudo jelly. (Quoted from Wikipedia)
Let's look at the production cost in Ai Yu:
Ai Yu powder: seaweed extract, konjac extract, sodium citrate, citric acid, glucose, edible spices and edible pigments. The cost is about10g, not exceeding that of 20 yuan.
Aiyu Jelly: It needs planting → pollination → ripening → harvesting → insolation → drying → digging seeds → kneading → making. If the labor cost is not considered, the seed material of Aiyu is at least nearly 1,000 yuan per catty.
What kind of production technology do you think a large number of merchants will use to feed you?
This time I went to Nanzhuang, Miaoli, and got to know Ai Yu a little.
Don't think that the tree in the picture is Ai Yushu.
This is Ai Yu. Ai Yu is mainly a vine, which usually clings to rocks or trees.
There are some small white spots on the surface of Ai Yu. If you don't look carefully, you'll think it's a green mango, but you'll know it well.
Ai Yu itself is not big.
Compare my 5-inch mobile phone.
I picked a few immature love jade to explain a little.
In order to mature, Ai Yu must be pollinated. At present, Ai Yu is actually not a fruit. Ai Yu is a cryptoflowering plant. At present, it is its flower, and the fruit is a hidden flower, that is, there is no flower, which is directly the appearance of the fruit. Flowers are hidden in fruits and divided into female plants and male plants. Pollination is accomplished by a small parasitic bee-Ai Yu Bee.
At present, I love jade, flowers and fruits. If they are mature, the flowers in Aiyu's flowers and fruits will bear fruit, and the pink space will be full of fruit.
Ai Yu's flowers and fruits are divided into male and female fruits, and the tip of the knife refers to the small hole of the fruit, which is specially used for insects such as AI Yu bees to fly in for pollination. After pollination, there will be a fruitful period in Ai Yu.
The place where the edge is scraped is the style, which will form the style of the fruit after pollination.
Aiyuhuaguo will open a small hole below to let Aiyuhuaguo come in for pollination. Female Ai Yu flowers and fruits began to bloom and pollinate in June, and the fruits matured and cracked in June165438+1October. With the interest of bees, the hidden flowers of female plants bloom, allowing bees to lay eggs in the flowers of male plants for the winter.
Because Ai Yu is a vine, it contains a lot of sap, which is very sticky. If you touch it, you can't wash it off with soap. You must wash it with cooking oil.
After Ai Yu ripens and bears fruit, it is necessary to remove the epidermis and then start to expose to the sun. Usually, this work takes two to three days. After drying in the sun, Ai Yu needs to cut one side of the fruit and turn it over to continue the insolation, which will take another two to three days.
This is what Ai Yu looks like after the seeds are exposed.
This is a batch of Aiyu seeds bought from Alishan.
Ai Yu's peel was cut very thin by professional workers before being exposed to the sun, so each finished product kept a certain thickness. Ai Yu seed is connected with style and pericarp.
This is what happens when you peel the seeds of Aiyu from your skin. Aiyu seeds and styles are all pulled down.
Sometimes styles are stripped together.
The dialed love jade seed.
Traditional hand washing loves jade, and then you have to experience it.
Hand-washing Ai Yu If you wash directly by hand, the tableware and hands should not be greasy, so wear gloves for safety.
The proportion of hand-washed Ai Yu is about 1 to 5 kg. Embryo cloth is used to hold Ai Yu seeds, and reverse osmosis water cannot be used for making jade, because Ai Yu pectin must react with calcium ions in water to form jelly.
Then I started washing by hand.
Hand-washing Ai Yu is to rub out the pectin from Ai Yu seeds and let the pectin from Ai Yu seeds dissolve in water, thus forming Ai Yu.
In the process of hand washing, the color of Ai Yu will gradually approach amber.
After cleaning, the Ai Yu seeds were extruded with the embryonic cloth, and the remaining Ai Yu seed pectin was used as the adhesive. When Ai Yu seeds are taken out of the embryo cloth, they will become common Ai Yu seeds among vendors, but it usually takes two days to throw them away, otherwise they will become moldy.
After washing, Aiyu jelly should not be shaken at will while waiting for solidification.
The condensation will be completed in about ten minutes.
Not long after the condensation is completed, water will begin to appear on the surface, which shows that the love fish hole is ready.
Almost like this, you can eat it. Natural hand-washed Aiyu jelly will gradually go against the current. If you put it on the table like this, it will turn into water in about a day. However, if the love jade you bought is not natural, you can still eat it every other day, but it must not be called natural love jade jelly.
Ai Yu doesn't have any seasoning, only a faint Ai Yu flavor. Actually, the taste is very light. If you add some lemon or honey, it's almost impossible to get the light taste of Ai Yu. However, drinking a cup of these drinks in hot summer is really cool to quench your thirst. Ai Yu is actually mainly composed of water. The main function of Ai Yu pectin is to reduce the cholesterol content in blood and promote metabolism and diuresis.
