Source: This product is the inner wall of the dried gizzard of Gallus gallus domesticus Brisson, a pheasant. After killing the chicken, take out the chicken gizzards, peel off the inner wall immediately while it is hot (do not wash with water first, otherwise it will be difficult to peel off and easy to break), wash and dry.

Preparation method

Chicken gizzard: wash and dry.

Stir-fried chicken giblets: Take clean chicken gizzards and stir-fry them according to the method of stir-frying or blanching (Appendix II D) until they swell. The surface of this product is dark brown to burnt yellow, and when observed with a magnifying glass, it appears to be granular or fine bubble-like. It breaks easily when broken, and the cross section is shiny.

Vinegar chicken giblets: Take clean chicken giblets, stir-fry them according to the stir-frying method (Appendix II D) until they swell, spray with vinegar, take out and dry. For every 100kg of chicken gizzard, use 15kg of vinegar.

Characteristics: This product is an irregular rolled piece, about 2mm thick. The surface is yellow, yellow-green or yellow-brown, thin and translucent, with obvious strip-like wrinkles. The texture is brittle, brittle, and the cross section is horny and shiny. The smell is slightly fishy and the taste is slightly bitter.

The nature and flavor are sweet and flat. Returns to the spleen, stomach, small intestine, and bladder meridians. Store in a dry place to prevent moth.
