Step 1
Grinding: the amount of rice and glutinous rice depends on the viscosity of glutinous rice, usually: glutinous rice: rice =7∶3. Screen the rice to remove impurities, wash it with clear water for three times, then put it in a pot and soak it in clear water for 24 hours until the rice grains become soft. Grind the rice flour slurry with a water mill, wrap the rice flour slurry in a white cloth bag, put it on a flour extruder, and squeeze out the water in the bag. 500 grams of rice can produce 800 wet noodles.
Second step
Fermentation: ferment the wet rice flour (the fermentation time is 12 hours in spring and autumn, and it can be used at any time in summer and 48 hours in winter), and then put it into a dough mixer for later use.
Third step
Stuffing: remove impurities from adzuki beans, wash them, add alkaline flour according to the feeding standard, cook them in a pot, grind them with a stuffing machine, and add brown sugar and mix well for later use.
Fourth step
Production of finished products: knead the mixed flour, each weighing 65g, roll the mixture into fried cake skin one by one, wrap 30g bean paste stuffing, and shape. The oil pan is filled with oil, and when it is cooked to 5 minutes, put in the wrapped green cake, gradually increase the firepower, turn it frequently with long iron chopsticks and fry for about 25 minutes.
