2 green peppers

How to make braised frozen tofu

1. Buy a piece of bile tofu, rinse it with cold water and freeze it in the refrigerator for more than one night.

2. After freezing, take it out and defrost it naturally at room temperature for 2 hours

3. Cut into cubes about 2cm in size. Drain in a basket (you don’t need to completely thaw it, so it’s easier to cut)

4. Peel the potatoes and cut them into pieces about the same size as tofu

5. Wash the green peppers, remove the stems and seeds. Cut into roughly sized pieces.

6. After the pot is hot, pour oil. When the oil is 50% hot, add rock sugar and turn to medium-low heat. Use a spatula to slowly stir the sugar into the oil. (The fire should be low and shovel constantly to avoid burning the pot.)

7. After the rock sugar melts, add star anise, cinnamon, Sichuan peppercorns, ginger slices, and dried chili peppers. Blow it until fragrant, about 30 seconds.

8. Turn to high heat, add potatoes, and stir-fry for 2 minutes.

9. Pour in the frozen tofu, then add dark soy sauce and salt. Stir fry for 2 minutes. Add water, bring to a boil, cover the pot, turn to low heat and simmer for a while.

10. Open the lid of the pot and check to make sure it doesn't dry out. After about 4 minutes, open the lid and turn to high heat. Add the green pepper and stir-fry for 2 minutes

11. When the soup is almost reduced and there is still a little bit left, add chicken essence and mix well.
