1. Remove pedicels from green peppers, wash and cut into pieces. Wash the chicken gizzards and cut into pieces.
2. Heat the wok and drain the oil. Add onion and ginger.
3. Pour the chopped chicken gizzards and stir fry, and pour some cooking wine.
4. Stir-fry until the chicken gizzards become tight.
5. Put more oil in the pot.
6. Stir-fry green peppers.
7. When it is spicy, pour in the chicken gizzards and add the oyster sauce.
8. Add some sugar, salt and chicken essence.
9. Just stir-fry a few times.
