Making:
1. Wash the mutton and soak it in water, soak it in bleeding water, and change the water several times in the middle for about half an hour.
Note: It is best not to save this process, especially if you don't want to blanch the mutton.
2. Lamb blanching: Boil the mutton pieces in cold water for a few minutes, turn off the fire when you see a lot of blood stains, immediately pour out the sewage and clean the mutton.
Note: Don't boil the water for too long, just for a few minutes. Turn off the fire just before the water turns clear, and control the time.
3. Stir-fry the cleaned mutton pieces in a pot, and then add onion ginger, onion, pepper, aniseed, orange peel and red dates.
4. Stir-fry until the spices give off fragrance and the meat turns yellow slightly. Add soy sauce, stir-fry evenly, and then pour water to boil.
If you want to stew faster and worse, you can turn to the pressure cooker and stew the tomato pieces together.
