A little minced garlic and a little green onion 10g ginger slices, some dried chili, 5ml cooking wine, 4g salt, appropriate amount of chicken essence, 10g Pixian bean paste, appropriate amount of corn starch, 10ml light soy sauce, 2ml dark soy sauce, 2g sugar, 10ml water starch, appropriate amount of cooking oil, 2 slices of lemon
Steps to make braised saury
1. Place the cleaned saury on a plate and empty the water.
2. Add salt, chicken essence, a little light soy sauce and spread evenly, then sprinkle with flour and spread evenly, marinate for ten minutes.
3. Prepare minced garlic, ginger slices, scallions, and dried chili peppers for later use.
4. Heat the pan with oil and cook until it is 60% hot. Add the saury
5. Fry for about 2.5 minutes until the saury smells burnt and fragrant. Remove and set aside.
6. Leave oil at the bottom of the pot 1. Add ginger slices, minced garlic, green onion and dried chili and stir-fry until fragrant. 2. Pour in a little cooking wine. 3. Add appropriate amount of water. 4. Add light soy sauce, bean paste, dark soy sauce, salt, chicken essence, sugar and lemon, mix well and bring to a boil. 5. Add the saury and cook for about two minutes until it becomes fragrant. 6. Take out the saury and put it on a plate and set aside.
7. Add appropriate amount of water starch to the soup in the pot and mix thoroughly to make a thick soup. Pour the thick soup over the saury and sprinkle with chopped green onion. Cut a few slices of lemon and put it on the plate. If you like it, you like to squeeze some lemon juice on the saury before eating it.
Tips
Saury has a strong fishy smell, so you need to remove the black film from its belly before cooking.
