How to make floating fish balls / shrimp dates / squid balls ?
Different main ingredients, there are different ways to handle.
1. Shrimp, shelled, chopped (do not use a blender, chopped and eaten with the texture of shrimp grains)
2. If it is a fish, remove the middle fish bone, and then take off the abdominal spines, then chopped with a knife.
3. If it is squid, chop it up directly (again, don't use blender, chop it up to get the taste of squid)

Grab a big pot, mix all the ingredients together, pour in a proper amount of water, and mix it well.
Pour oil into a wok and bring to boil, then turn to medium low heat. Take the batter and squeeze it into the palm of your hand, then use a spoon to scrape it off and fry it in the frying pan.
Don't move the dumplings when you put them in the frying pan, wait for them to form and then stir them with a spatula. Let the croquettes fry more evenly.
Fry until golden brown and the balls are floating on the surface of the oil.
