What is the first course of Wuchuan?
Wuchuan wedding banquet is rich in dishes. Wedding banquets in neighboring counties and cities are generally 13 dishes, including one soup and one syrup. Wuchuan wedding banquet has 16 to 18 dishes, and generally 18 dishes are the most common, because Wuchuan people like the homonym of "18" as "real hair", which means "it will be developed". There must be a shark fin soup with two soups and one sugar water. "Shark's fin soup" is essential for Wuchuan people to serve wine. Shark's fin soup is made of shark fin cartilage, which is the most expensive dish in the whole banquet. If it is not available at the banquet, it will be laughed at by people who come to the wedding banquet. Sugar water is ginkgo, lotus seeds and tremella, and now even papaya chinese forest frog is used as sugar water.

Cheap pig mixed water and beef mixed water cannot represent the essence of Wuchuan's food culture. In Wuchuan's food culture, there are not only cheap pig mixed water and beef mixed water, but also high-class banquets that are "never tired of eating fine and stewing fine", and high-class banquets are the essence of Wuchuan's food culture. Wuchuan people have a high-level pursuit of food culture, and pay the most attention to the "clear, fresh, tender, smooth, cool and fragrant" of banquet dishes. Wuchuan's banquet is famous for its excellent materials and fine workmanship. Wuchuan people treat guests with wine, and the materials used in the banquet are unambiguous. More than half of the dishes on the banquet are the finest and freshest seafood, prawns, crabs, sea cucumbers, marine fish and scallops (a kind of conch) are common dishes in the banquet, and the rest are livestock meat such as pigs, chickens, ducks and geese. I once had the experience of going to a wedding banquet in a neighboring county. I felt that the wedding banquet there was not as good as our Wuchuan in both taste and banquet materials. First of all, there was little seafood, and the shrimps and crabs were small and not fresh enough. This was probably because they didn't have our Wuchuan offshore. During the dinner, there was a "fish head tofu sauerkraut soup". Such dishes and materials are not elegant in Wuchuan. This obvious difference between the two places, I think, is probably related to Wuchuan people's hospitality, love of face and love of comparison.
