Wash the bought fish head, remove the excess viscera from the head, cut off the gills, and then cut the fish head in half with a knife. Rub with cooking wine, Jiang Mo, white pepper and a little salt and marinate for more than ten minutes. Soak the medlar in advance and cut the onion into sections.

Third step
Heat the vegetable oil in the pot, add a little lard (lard can make the fish soup whiter), add ginger slices and pepper and stir-fry for fragrance; Wipe the water off the fish head with kitchen paper and fry it in a pan.
Fourth step
When the fish head is fried until both sides are yellow, pour water, add pepper and cook together. When the water boils, break the bubbles on the soup.

After soaking, pour in tofu and stew for about 20 minutes.

Cooking tips
The bitterness of fish grows first. Be sure to take the fish head with you when you buy it, or it will rot and boil in a pot of bitter water.
