1. For 80 pounds of brine, prepare 30 grams of yellow gardenia, smash it into pieces, and rinse with clean water. Add 1500 grams of water to the casserole, add gardenias, bring to a boil over high heat, then reduce to low heat and simmer for about five minutes, turn off the heat, filter out the gardenias and retain the water.
2. Add 30 grams of salad oil to the pot, add 1200 grams of rock sugar, turn on low heat, simmer slowly, wait until the rock sugar melts, then turn to low heat and continue stirring.
3. The color of the sugar changes from thin to thick, and from white to yellow. When you see yellow powder forming on the bottom of the pot, keep the heat low and continue stirring. Wait until all the yellow bubbles rise and start to fall back. Quickly pour the boiled gardenia water into the pot and stir evenly. Continue to simmer over low heat for about two minutes and turn off the heat.
