Method one
Ingredients: a catty of chicken liver, a proper amount of cooking wine, a proper amount of salt, two pieces of seasoning, a few pieces of onion, a few pieces of ginger and a proper amount of soy sauce.
Exercise:
1, buy fresh chicken liver, soak it for more than two hours, change water several times in the middle, and clean up the excess impurities and blood;
2. Wash the chicken liver, put it in a pot with hot water for about five minutes, take it out and wash it with warm water;
3. Boil the water in the pot, add chicken liver, onion, ginger, aniseed, cooking wine, soy sauce and salt, and simmer for 30 minutes;
4. Cool chicken liver and soup together, slice and eat directly.

Method 2
Ingredients: 800g raw chicken liver, cooking wine 1 tablespoon, half a tablespoon of soy sauce, 3rd onion, 4 slices of ginger, pepper 1 tablespoon (about 20 tablets), aniseed 1 slice, cinnamon half root, fragrant leaves 1 slice, fennel/kloc.
Exercise:
1. Soak the chicken liver for two hours, change the water several times, remove the blood inside, and remove the fascia and impurities inside the chicken liver;
2. Put the chicken liver into the pot and cook it with hot water and cooking wine until it is cooked to a medium degree. When you cook chicken liver, you will produce a lot of blood foam. Skim the blood foam with a spoon and remove the chicken liver without bloodshot;
3. Pour the water out of the pot, suck the pot clean, add the chicken liver, pour boiling water, and prepare the marinated chicken liver;
4. Put fennel, pepper, fragrant leaves, aniseed, cinnamon, onion and ginger into the pot, add cooking wine to remove fishy smell, add appropriate amount of salt to taste, and boil for 10 minutes on low heat;
5. After the ceasefire, it is not necessary to take the chicken liver out of the marinade and soak it for at least one hour.

Method 3
Ingredients: chicken liver 1000g, salt 15g, soy sauce 10ml, 50g onion, 3 slices of ginger, 2 slices of star anise, 20 slices of pepper, cinnamon 1 slice, 3 slices of dried pepper, and cooking wine10ml.
1. Wash the chicken liver, remove the tendons and grease on the surface, and soak it in clear water for 30 minutes;
2. Put the chicken liver in a cold water pot, boil it over high fire for 1 min, take it out, wash it off with hot water, and dry it for later use;
3. Put all seasonings (cinnamon bark, dried tangerine peel, tsaoko, pepper, star anise, fragrant leaves, white sugar, soy sauce and cooking wine) into a pot, add onion ginger and dried Chili, add chicken liver, boil for about 30 minutes, and finally add salt to taste;
Turn off the fire and let it cool. Chicken liver is soaked in marinade for 4 hours before eating. It tastes better after staying overnight.

Method 4
Ingredients: 500g chicken liver, pepper 1 bar, 2 peppers, 2 crystal sugar, 1 tbsp salt, 2 tbsps cooking wine, 2 tbsps soy sauce, 2 tbsps soy sauce, 3 slices of onion, 5 slices of ginger, 2 slices of star anise and 4 slices of fragrant leaves.
Exercise:
1, chicken liver was washed and soaked in water for a long time, and blood was soaked out;
2. Cut the fascia above the chicken liver with scissors, squeeze out blood, wash and soak for a while;
3, cold water pot, put a small handful of pepper, ginger, help to remove odor;
Boil the water for three minutes, and the blood foam will float on the water. Skim it off with a spoon. If the chicken liver is bloodless, it will be fine.
5. Wash the pot, pour hot water, add chicken liver, put onion, ginger, pepper, star anise, pepper, fragrant leaves and rock sugar into the pot and cook together;
6. Pour in and pour out soy sauce, soy sauce and cooking wine. After the fire boils, simmer for 20 minutes.
7. Cook and turn off the fire. Don't hurry to get it out. Be sure to soak for a while, it will be more delicious after a long time.
