Most of the alcohol in Baileys liqueur is produced through whey fermentation. Using an emulsifier containing essential oils from plants, the raw alcohol from fermentation, cream, and a variety of Irish whiskeys are blended to form an emulsion. This process prevents the alcohol and cream from separating from each other during storage. The recipe for Baileys liqueur also includes sugar with some herbs, as well as a few other confidential ingredients.
According to the producer, there are no preservatives in the wine, as the alcohol in the wine works well as a preservative. The cream used in the production comes from an Irish dairy company, Glanbia, whose factory in County Cavan, Virginia, produces a range of whole milk powder and whipping cream, and which has been the main supplier of cream to Baileys Desserts for more than 30 years.
