As early as the Western Han Dynasty, due to the shortage of food and the limitation of storage conditions, in order to achieve the purpose of quality preservation, antisepsis and convenience for eating, the wise Anyue ancestors skillfully mixed dried vegetables and pork such as dried cowpea and dried green vegetables with plant spices such as spiced and star anise, and put a layer of dried vegetables and a layer of roasted pork breast into the earthen altar to form today's jar meat.
