Steps
1. Clean the chicken claws.
2. Cut off the nails on the chicken claws with scissors.
3. Put the chicken claws into a pot of boiling water, blanch until the end of the blood floats, fish out and wash.
4. Put the peppercorns, cinnamon, cumin seeds, star anise and dried chili peppers cut into segments into the pot.
5. Add water to the pot, then add salt and sugar.
6. Add soy sauce.
7. Add the cooking wine.
8. Finally put in the blanched chicken claws.
9. Put the pot on the stove, turn on the high heat to boil to medium-low heat.
10. Cook for 10 minutes off the heat and cover to soak for 1 hour, fish out and cool to serve.
