Ingredients: 8 duck wings, fresh bamboo shoots 150g, fermented wine 150ml, chopped pepper sauce 15g, ginger 1, soy sauce 10ml, and a little salt.
Exercise:
1. Peel fresh bamboo shoots, cut them in half and cut them into hob blocks.
2. Fill the pot with enough water. After the fire boils, put the bamboo shoots in it for 5 minutes, then take them out and soak them in water to remove the bitterness;
3. Wash the duck wings, chop them into three small pieces, put them in a boiling water pot, blanch them with sugar to remove the blood, and take them out for later use;
4. Pour some oil into the pot. After the oil temperature is 60% hot, add the sauce slices and chopped pepper sauce and stir fry;
5. Stir the duck wings for 3 minutes;
6. Until the epidermis is slightly yellow, add bamboo shoots, stir-fry with soy sauce and color;
7. Pour the fermented grains, cover and stew for 20 minutes, and finally season with salt.
