How to make steamed sturgeon at home
To make steamed sturgeon, kill and wash the sturgeon, and use a brush to brush the mucus on the surface. Marinate the fish body and belly with salt, cooking wine, green onion and ginger for 15-20 minutes. After the water in the steamer boils, add the fish and steam it for 7-8 minutes, no more than 15 minutes at most. (Determine the length of time based on the size of the fish.) After the fish is steamed, pour 2 tablespoons of steamed fish soy sauce along the body of the fish. Add peppercorns to the wok and pour in oil. Heat over low heat until the oil emits green smoke, remove the peppercorns, and pour the hot oil on the fish body and shredded green onions.
