One, roasted whole chicken
Ingredients:
1 whole chicken, 50 ml of cooking wine, 2 tablespoons of salt, 1 teaspoon of pepper, 1 teaspoon of black pepper, 1/4 lemon, 30 ml of light soy sauce, 3 star anise, 5 g of cumin, rosemary, dried chili peppers, ginger, garlic, honey, moderate amount.

Practice:
1, chop off the claws of the chicken, open and wash, drain, and rub the chicken inside and outside with salt.
2, make a slurry in a suitable sized pot. Mix the cooking wine, ginger juice, minced garlic, pepper, black pepper, lemon juice, soy sauce, star anise, minced rosemary, dried chili peppers (according to your preference), rub it all over the chicken, marinate for 1~2 hours, then turn the chicken over and marinate for another 1~2 hours or so.
3, in the marinated chicken stomach filled with green onion knots, onions, ginger slices, etc. Use toothpicks to seal the opening of the chicken stomach.
4. Skewer the chicken on a spindle, paying attention to the center of gravity of the chicken so as not to turn it up and heat it unevenly. Brush with marinade and wrap wing tips and leg tips in tin foil.

Tips:
1, if you do not use wine, instead of white wine, if the results are better.
2, the marinade can be longer, if time permits, can be placed in the refrigerator overnight marinade.
Two, cheese seafood baked rice
Inputs:
Rice 100g, green peppers 1/4, red peppers 1/4, mushrooms 2, shrimp 5, 1 tablespoon of olive oil, 60g of cheese, salt, pepper.
How to make:
1. Cut green and red peppers into small dices, and cut mushrooms into strips. Toss the rice with olive oil, then add salt and pepper and mix well.
2. Add the diced green and red bell peppers to the rice and mix well. Place the shrimp and mushrooms on top of the rice, and then add a layer of cheese slices.
3. Preheat the oven in bakery mode at 171℃ for 5 minutes, place the baking sheet on the lower shelf and bake for 15 minutes covered with tin foil.
Tips:
In order to prevent the cheese from being burnt, make sure to cover with tin foil before baking.
Three: Garlic Tuna Steaks
Ingredients:
Slice the tuna steaks into 8-10 pieces, 7 tablespoons of soy sauce, 5 tablespoons of cooking wine, 2 tablespoons of vegetable oil, 1 tablespoon of vinegar, and 1 head of garlic, crushed.
How to Make:
1: Pour the soy sauce, cooking wine, vegetable oil, rice vinegar, and garlic into a large ziplock bag, and seal the bag after removing as much air as possible. Shake the bag to make sure the fish steaks are covered in the seasoning, and then place in the refrigerator to chill for at least 1 hour.
2. Preheat the grill to 180 degrees Fahrenheit and brush the grill grates with a little oil.
3. Place the fish on the preheated grill and discard the remaining marinade, but try to get as much of the minced garlic as possible to stick to the surface of the fish. Grill the fish for 3 minutes on each side, or 5-6 minutes on the top oven heater alone, for just undercooked but not overcooked fish. If you like it medium rare, reduce the time a bit. Serve with a squeeze of lemon juice to taste.
