First of all, the poor water quality of cultured hairy crabs is one of them. In order to make more money, many merchants will transform some rice fields into crab farms, and the water quality in rice fields is very poor, so crabs cultured in rice fields will inevitably be polluted, their bodies will change, and crab roe will become like this.
Secondly, the crab is immature, and the bitter crab roe is completely different from the normal crab roe. Normal crab roe is golden yellow, while bitter crab roe is usually light and thin, which may be caused by immature crab culture, but this crab roe contains no harmful substances and can be eaten.
There is also insufficient time for clean breeding of hairy crabs. Generally speaking, crabs need to be soaked in clear water for at least two days after they are bought. During this period, crabs will drain completely if they are not eaten, but if the time of clean farming is too short, crabs will naturally taste bitter.
It may also be caused by the wrong way of eating. When eating crabs, you should remove the internal organs such as crab cheeks, crab stomach and crab heart. Crab gills grow on both sides of the crab body, arranged in strips, shaped like eyebrows, and are the respiratory organs of crabs, with germs and dirt on them; Crab stomach is located in the first half of crab body, which contains a lot of sludge and bacteria. The crab heart is close to the crab stomach and located in the middle of the crab yolk. It tastes bitter, so get rid of it, or it will feel bitter.
The last reason may be that crabs are ill. If the crab is sick, the crab yolk will become unpalatable, because the sick crab is not easy to survive and very easy to die. Although some dead crabs are very big, they are just so-called "puffiness" and their weight is simply insufficient. Sick crabs can see many spots on their shells, which is caused by a disease called "autumn caterpillar disease". Be careful when buying.
