Method 1: yellow mud pickling method
This method is old-fashioned, and there may have been yellow mud everywhere before. Yellow soil is a very fine and sticky yellow soil. If it is easy to find, the salted duck eggs pickled in this way are delicious, moderately salty, fragrant and have a high success rate.
Prepare ingredients: fresh duck eggs, yellow mud, salt and high-alcohol liquor.
Pour 3kg of yellow mud into the basin, add some water, and stir the yellow mud into a paste. In the process of mixing, remove foreign bodies in the soil to ensure that the soil is fine and there are no large particles.
Then, 50 grams of salt and 30 ml of high-alcohol liquor are poured into the yellow mud and fully stirred.
Then clean the 30 duck eggs that need to be pickled, preferably with a brush, and then dry them in the sun.
Finally, roll the duck eggs in the yellow mud, stick them on the yellow mud, immediately put them into the pretreated jar, seal the lid and marinate for more than 20 days.
Method 2: salting-out method
Many people like to use this method, which is especially easy. As long as the salt water is well mixed, the duck eggs can be cured. However, if you want to marinate the duck eggs well, you need to mix a good proportion of salt water, otherwise the duck eggs will easily deteriorate during the salting process. Don't make a mistake and waste a can of duck eggs.
Ingredients: fresh duck eggs, 250g of salt, boiled water1000ml, 50ml of high-alcohol liquor.
Boil the water in advance, then let it cool, hot water is not allowed, then pour the cold boiled water into the container, then pour the salt and high-alcohol liquor into the container, and stir until the salt melts.
Then put the washed and dried duck eggs into salt water, seal the lid and marinate them in the shade for more than 20 days.
Method 3: salt rolling pickling method
This method belongs to lazy people. It doesn't need yellow mud and water, just salt and wine. The material is simple and the method is simple. Not afraid of no yellow mud, not afraid of bad mixing of salt water. Generally, after reading this method, you can succeed in one time, which is especially easy to do, so friends who have never made salted duck eggs can try this method.
Ingredients preparation: fresh duck eggs, salt and high-alcohol liquor.
Pour a bowl of salt and a bowl of liquor. You can pour less first, and then pour it when it is not enough. This method is more casual.
Wash the duck eggs one by one and dry them. If there is no water, take a duck egg, roll it in white wine and then roll it in salt. The surface of duck eggs should be sprinkled with salt.
Finally, wrap the salted duck eggs with plastic wrap to prevent the salt from falling, and then put them in a container, so that all the duck eggs are handled.
Cover tightly and marinate for more than 20 days before eating.
Have you learned all three methods? Please note the following points:
1. Before curing duck eggs, check for cracks. If there are cracks, you can't add salt. In addition, duck eggs should be washed, brushed with a brush, and exposed to the sun to ensure that the duck eggs are dry, so that they will not go bad when pickled, and the duck eggs are more likely to be sanded and oily.
2. Containers containing duck eggs need to be blanched in advance, exposed to the sun and dried to ensure that there is no water or oil.
3. No matter which of these three methods is used, liquor is needed, and this liquor needs high degree liquor.
