Fish noodle is a specialty of my hometown, which is very popular among local people. Whenever I remember fish noodles, the sweetness of the flavor seems to throb on my tongue, reminding me of the scene when my family and I were enjoying this delicious food together.
According to historical records, my hometown is the birthplace of fish noodles, with a processing history of more than a thousand years. Fish noodles are made of fresh fish, pork, sweet potato starch, salt and other main raw materials, using traditional folk handmade, is a pure natural green key to health food.
Whenever I go back to my hometown, I always pester my grandmother to make fish noodles for me to eat, and I am even more curious about how my grandmother made fish noodles! Grandma said: "The selection of materials to make fish noodles is very delicate, the fish must be fresh and live fish caught and killed, so as to ensure that the meat is tender and healthy, but also choose to refine the sweet potato starch, so that the fish noodles smooth, chewy texture. I remember one time my grandmother and uncle took me to the edge of our own pond and fished out a few big, live grass carp with a fishing net. At the edge of the pond I grabbed a fish, it jumped and splashed me a face of water, water droplets slipped off, I clearly see my grandmother's athletic stance, she held a knife in one hand and a fish in the other hand, the knife in the fish back and forth to remove the fish scales it! There was a big stone mill in the courtyard, and my uncle and I put the fish that my grandmother had chopped up into the stone mill and pushed the stone mill to grind the fish into mush. The most crucial step in fish noodle making, I think, is to make the noodles! I saw my grandmother pouring the right amount of starch, salt and water into a basin, then pouring in the ground fish, so that the starch and fish are fully integrated in the kneading, and finally kneaded into a large dough, and then cut into small dough of the same size. I followed my grandmother's example and rolled the dough into a pancake, rolled it into a roll, and put it into a steamer basket and steamed it for about 1 hour. Steamer on the flow of steam mist emitted a burst of fish noodle aroma enveloped the entire kitchen, I like a mouth-watering little greedy cat around the steamer in circles. We sat around happily and savored the fish noodles made by my grandmother. The long fish noodles were on my tongue, and I didn't gulp them down, I took one bite at a time like eating noodles, slowly sucking and chewing on this delicacy that was full of affection. And my aunt and uncle were eating fish noodles while drinking the old family mellow old rice wine, it is really doubly cool.
