Lotus roots need to be peeled when making soup.
Main ingredients: 500 grams of large pork bones and 500 grams of lotus root.
Accessories: 10 peppercorns, 1 teaspoon salt, 1 star anise, 1/2 piece of ginger, 1 green onion, 2 drops of white vinegar, and appropriate amount of water.
Steps:
1. Peel the fresh lotus root and soak it in water for a while.
2. Put the stick bones into boiling water, boil them for two minutes to draw out the blood, and remove the blood in the bones.
3. Peel the lotus root and cut into small pieces.
4. Cut the ginger into thin slices and set aside.
5. Put the blanched stick bones into the pressure cooker, add ginger slices, 10 peppercorns and 1 star anise.
6. Pour in the chopped lotus roots, add water to cover the lotus roots, drop in 2 drops of white vinegar, cover and cook until the bean gluten is cooked for about 35 minutes.
7. Finally add salt and garnish with chopped green onion.
