In the United States, processed fish eggs can be sold as caviar as long as the names of the fish produced are printed on bottles and cans. In France, because the belly incident is valued here, the definition of caviar is as precise and strict as champagne: only the eggs of sturgeon are eligible for caviar.
Not all sturgeon eggs can be made into caviar. There are more than 20 kinds of sturgeon in the world, among which only the eggs of Moby Dick, oscietra and Sevruga are made into caviar.
