Guangfu Pavilion is located at the southern end of Zangjiaqiao, which is the intersection of five roads, namely Tangzi Street, Hanjiatan, Wudaomiao and Yangmeizhu Xiejie. It is like a stockade, and the owner's surname is Mu and there is no male, so some literati nicknamed Guangfu Pavilion "Mujiazhai". Guangfu Pavilion was gradually forgotten by people, and Mujiazhai's reputation for fried pimples rose. Most of the people who went to Liulichang were literati. After visiting Liulichang, many celebrities also patronized. At that time, after a famous calligrapher tasted it, he wrote a poem in ink, saying, "I have been visiting Yanjing for 20 years, and I will never forget Mu Guiying at every meal. I sent a message to her waitress, but I used to spoon it myself. " Hu Peiheng and Yu Feian, famous painters, also presented calligraphy and painting, praising fried pimples. 1953, the female shopkeeper died, and Guangfu Pavilion closed down because no one inherited it. The business of fried pimples in Mujiazhai is booming, and many restaurants have followed suit. In the past, Lishamao Hutong (now Dali Hutong) outside the door was the most famous "Dongen Yuanju". The founders of Enyuanju were brothers Ma Donghai from Hejian County, Hebei Province. 1929, they went to Beijing to learn the method of stir-frying pimples, made innovations and improvements, and soon became famous in Kyoto. Stir-fried pimples are cut into dough with superior flour, kneaded evenly, kneaded into a long circle with the diameter of soybean, then pulled into round pimples with the size of soybean by hand, boiled in boiling water, immediately taken out after boiling, soaked in warm water for three to five minutes, taken out, fresh and tender parts of beef and mutton are selected, shredded and stir-fried with oil and seasoning, then the cooked pimples soaked in warm water are poured in, fried with sesame oil and served with garlic according to different seasons. Because of its unique flavor, it has the characteristics of combination of main and auxiliary, and it is economical and practical. After it came out, it became the best snack in Beijing and was favored by people. From then on, the special fried dumpling has added new tricks to China pasta with its unique style.
