Ingredients: chicken feet, onions, ginger, garlic, dried chilies, Sichuan peppercorns, star anise, salt, sugar, light soy sauce, dark soy sauce, oyster sauce, cooking wine, cooking oil, ice water
1 . Prepare the chicken feet. I bought a pound. After buying them, we first need to cut off their nails one by one, and then clean them thoroughly.
2. Prepare a pot of water, pour the chicken feet into it, then add onions and ginger, add some cooking wine, and blanch the water. After boiling, we take out the chicken feet, rinse them with warm water, and drain the water below for later use. Prepare an appropriate amount of light soy sauce, pour it into the chicken feet, mix well and set aside.
3. Next, pour more oil into the pot, heat it up, pour the chicken feet in and start frying until golden in color and looking dry, then take them out. Then take out the ice water we prepared. Be sure to use ice water instead of cold water. Pour the fried chicken feet into the ice water and soak them for more than 2 hours.
4. Only chicken feet soaked in ice water can have the shape of tiger skin. Don’t forget this. After the chicken feet are soaked, we prepare a pot of water again, add onions, ginger, garlic, dried chili peppers, peppercorns, star anise, salt, sugar, light soy sauce, dark soy sauce, and oyster sauce, and bring it to a boil.
5. After boiling, take the chicken feet out of the ice water, put them into the pot and start cooking. After the heat is boiling, turn to medium to low heat and continue to simmer for 20 minutes before serving. Let’s eat.
