Ingredients: pork 100g, rice flour 1 (about 100g), 50g carrot, 20g onion, cooking oil, salt, soy sauce.
Cooking method
1. Soak rice noodles in cold water 15 minutes or so, and the soaking time of different brands of rice noodles will be different until the rice noodles become soft. Fried rice noodles don't stop. This step is very important. It should be soaked in cold or warm water. The temperature should not be too high, nor should it be soaked in boiling water. Otherwise, the rice noodles will break into several pieces during frying.
2. Pick up the soaked rice noodles and drain them. This is also one of the tips. If the water is not drained, fry it in the pot. If there is too much water in the pot, the fried rice noodles will not be cold.
3. Wash the pork and cut it into shredded pork. Add appropriate amount of salt, cornstarch and soy sauce, mix well and marinate for 5 minutes. Add raw flour to marinate, and the fried pork will be more tender and smooth.
4. Peel the carrots and cut them into shredded carrots. Wash the onion and cut it into pieces. Onions are white and green. You can also prepare some other vegetables you like here.
5. Add cooking oil to the pot. When the oil is hot, add the scallion, stir-fry over low heat 1 min, and stir-fry until fragrant. When the fire is big, it will burn easily and become bitter.
6. After smelling the obvious onion fragrance, change the fire, add shredded pork, stir fry quickly, and let the pork be heated evenly. After stir-frying for about 2 minutes, the pork will change color and be ready to eat.
7. Add the right amount of oil to the pot, add the rice flour and stir fry for a few minutes. If the spatula can't be turned over, you can stir the rice noodles with chopsticks to make each rice noodle fully heated, and then add the pork and stir fry.
8. Add shredded carrots and shallots, continue to stir fry for about 2 minutes, and fully fry all the ingredients.
9. Finally, add appropriate amount of salt and light soy sauce for seasoning, and heat while stirring 1 min. I like to hold chopsticks in my right hand and a spatula in my left hand, which makes cooking more convenient and rice noodles more evenly seasoned.
