90g crushed digestive biscuits or Oreo cookies
30g butter
226g cream cheese/8oz
1 whole egg liquid
2 egg yolks
40g fine sugar
13g corn starch
Vanilla 1-2 drops of essence
6ml lemon juice
70g whipping cream

Crush the biscuits with a mixer or place in a sealed bag and pound with a rolling pin. The eggs and cream are taken out in advance and brought to room temperature, and the cream cheese is also taken out in advance to soften.
Heat butter in microwave until melted, stir in biscuit crumbs. Mix thoroughly and then fill it into a mold lined with oil paper at the bottom, compact it with a spoon, and store it in the refrigerator.
Beat the softened cream cheese on low speed.
Add powdered sugar and cornstarch and mix well.
Add the beaten egg liquid and egg yolk in three batches. Add the light cream in three additions, and finally add the vanilla extract and lemon juice and mix well.
Preheat oven to 355F/180C. Take out the mold from the refrigerator, pour the cake batter into it, and shake out big bubbles (it doesn't matter if there are chunks of cream cheese in the batter). Place in the oven and bake at 355F/180C for 15 minutes, then turn to 300F/150C and bake for 15 minutes. After baking, don't take it out in a hurry.
