Mechanism of colloid aggregation caused by electrolytes in tofu and brine
The main component of brine is calcium sulfate. At present, the principle of ordering tofu is inconclusive. There are three main viewpoints: First, calcium ions cross-link with protein to form a calcium bridge, which leads to the settlement of protein. 2. Calcium sulfate changed the pH value of the system, resulting in protein precipitation. Thirdly, calcium ions make protein in tofu reach the isoelectric point, resulting in precipitation.
