1. Prepare the ingredients.
2. Clean the fish first, drain the water, and make a few cuts on the fish.
3. Apply cooking wine and salt to the fish, massage it a few times, then marinate for fifteen minutes, stuff the marinated fish belly with ginger slices and green onion knots.
4. Mix steamed fish with soy sauce, light soy sauce, and cooking wine in a ratio of 5:2:1, then add some chicken essence and mix thoroughly.
5. Pour in the prepared juice and steam until cooked. After boiling, steam for about fifteen minutes.
6. Add some minced ginger to the remaining half of the juice and microwave on high heat for one minute.
7. Take out the steamed fish, pour out the soup inside, and then pour in the juice from the other peninsula. Sprinkle some chopped green onion on top of the fish and finally pour hot oil on it.
8. This is done. Because mandarin fish has fewer bones, it is more convenient for the elderly and children to eat.
