1. Ingredients: Enoki mushrooms, spinach, green onions, ginger, pepper, salt, chicken essence, oil, water.
2. Cut off the roots of the enoki mushrooms and soak them in salt water for a while, wash them and set aside.
3. Open the pot, heat the oil and sauté the onions and ginger until fragrant.
4. Add the enoki mushrooms and stir-fry.
5. Add water, salt, chicken essence and pepper.
6. Add a handful of remaining spinach leaves.
7. Finally add chopped green onion.
