Ingredients: beef, celery, ginger, onion, salt, cooking wine, soy sauce, chicken essence, corn flour and oil.
Exercise:
1. Wash the beef and slice it along the horizontal line. It is best to pat the back of the knife a few times and marinate it with cooking wine, starch, shredded ginger, a little salad oil and water. If there is enough time, add some oil when mixing the meat and marinate for 1-2 hours. If there is no time, it needs to be marinated for at least 15 minutes.
2. Wash celery with ribs and leaves, cut into 3 cm long sections, blanch with boiling water, remove and cool with cold water, and control water;
3. Wash the onion and ginger, shred them and break them for later use.
4. Add the right amount of oil to the wok. When the oil temperature is high, put the marinated beef slices into a wok and break them up. Add a little soy sauce and stir well.
5. Add a little oil-fried chives and shredded ginger to the wok, pour celery into stir fry, add umami juice or soy sauce and salt to taste, then add fried beef and a little chicken essence and stir fry evenly to serve.
