Steps
1. Prepare the tofu and minced pork. Cut tofu into small pieces and soak in salted water for 15 minutes. Marinate the minced meat with cooking wine, ginger and a pinch of salt for about ten minutes and set aside.
2. Heat the oil in a wok, pour in the garlic and scallions, then pour in the appropriate amount of spicy sauce and stir-fry over low heat for about 2 to 3 minutes.
3. Add the marinated minced pork and stir-fry over medium heat for about 3 to 5 minutes.
4. Pour in the tofu soaked in salted water.
5. Add a small amount of water and cook slowly over low heat, adding a small amount of soy sauce.
6. When the pot boils pour in the starch thickened with water. Cook slowly until the juice is ready.
7. Plate and sprinkle with a moderate amount of pepper and green onion.
