Take the authentic Panjin river crabs as an example:
The hairy crabs below 2 taels, steam for 6 minutes over high heat and simmer for 3 minutes
The hairy crabs between 2-3 taels, steam for 8 minutes over high heat and simmer for 5 minutes
The hairy crabs between 3-4 taels, steam for 12 minutes over high heat and simmer for 8 minutes
The hairy crabs above 4 taels, steam for 15 minutes and simmer for 10 minutes
The hairy crabs above 4 taels are steamed for 10 minutes over high heat. 8 minutes
For hairy crabs over 4 taels, steam over high heat for 15 minutes and simmer for 10 minutes.
Simple steaming:
1. After receiving the river crabs, check for dead crabs, if there are dead crabs or not enough to weigh, hurry to contact the merchant to negotiate, deal with it and start to do it beautifully!
2. Cleaning, river crab cleaning general water rinse 3 to 4 times until the rinse water becomes clear, if you want to be cleaner, with a toothbrush brush (wear gloves to be careful with the hand ha), at first there will be turbidity, paddy crabs relative to the mud, the lake water is cleaner.
3. Steamer to a mouthful of water, into the right amount of water, install a good steamer, ready to cover the pot, into the crab tied legs directly placed, not tied legs on the pot cover to prevent small crab escape. Attention must be cold water in the pot, hot water in the pot will cause the crab to produce emergency response to cut their own segment legs. This is called leg drop.
