2. In the process of pickling fish, we can prepare ingredients and wash them. After the perilla, onion, pepper and garlic leaves are cut into small pieces, the garlic is peeled, it can be slightly broken and then cut into pieces. Ginger is washed and sliced with skin.
3. Put oil in the pot. When it is 50% hot, pour chopped peppers and saute until fragrant. Then add fish and 2 pieces of ginger and saute until both sides are golden.
4. Pour the boiled water, the water should cover the fish, then pour all the ingredients, cover and simmer for ten minutes, then turn off the fire.
Cooking skills of boiled live fish: 1. If you want boiled live fish to be fresh and tender, you must add boiling water to cook it directly, so as to avoid long-term cooking, and the fish will become old and firewood will not smell; 2. If the fish is bigger, you can cut it into several sections like me and cook it separately; If you want to keep a whole shape, you must put a flower knife on both sides of the fish, wipe with salt and cooking wine, and marinate it for a while in advance, which will be more delicious; 3.
