How to make meat rice dumplings:
1. Soak the rice dumpling leaves and wash them thoroughly. Put it into a large pot and cook for about 10 minutes. Boil and sterilize the cotton thread together
2. Wash the glutinous rice and soak it for two hours, then drain, mix with a little oil and salt and set aside
3. Red beans and peanuts Soak for more than six hours, add to glutinous rice and mix well
4. Cut off both ends of the rice dumpling leaves and prepare all utensils
5. Cut the pork belly into large pieces and use light soy sauce, dark soy sauce, cooking wine, Marinate the sugar, pepper powder and a small amount of five-spice powder overnight in advance to add flavor. Wash the ham and cook it for 20 minutes to remove excess salty fat. Cut into large pieces
6. Take the rice dumpling leaves and roll them up. Put glutinous rice, then put pork belly and ham, then fill up the glutinous rice, wrap the rice dumplings in the way and shape you like (I took the photo last year, the wrapping process is not detailed)
7. After everything is wrapped, Put it into a large pot, add enough cold water to cover the rice dumplings, cover it with a grate (the kind with spacers in the middle of a steamer), put a plate on top, cover the pot, bring to a boil over high heat, then turn to low heat and simmer for about 3 seconds. Cooking Tips
You can add or not salt, light soy sauce and oil to the glutinous rice according to your preference. It is best to soak beans for more than six hours. The pork belly can be marinated according to your favorite taste. Marinating it one night in advance will make it more delicious. Ham meat is very salty, you can boil it first to remove some of the salt. The grate and plate are pressed in the pot so that the rice dumplings will not roll excessively during the cooking process and prevent them from falling apart. The cooking time of the rice dumplings is adjusted according to the size and quantity of the rice dumplings.
