After the upper pot is plugged in, you can see that the water in the lower pot begins to climb up ... If you have a bean mill, you can start grinding beans now! Use three spoonfuls of coffee (about 24 grams) for two cups of water.

After the water completely rises to the upper pot, don't worry, wait for a few seconds, and then prepare to pour coffee powder after the bubbles rising to the upper pot are reduced.
5. Pour in the coffee powder-stir (stir left and right)
Pour in the ground coffee powder, stir it left and right with a stirring bamboo spoon, and evenly stir the coffee powder into the water. Start timing at the same time as the first stirring.
stir gently to avoid violent stirring. If it is fresh coffee powder, it will float on the surface to form a powder layer. The correct stirring action is to move the bamboo spoon in the left and right direction, and with the downward "strength", the coffee powder floating on the water surface is "pressed" into the water below.
6. Stir for two more times-turn off the flame
After the first stirring, time it for 3 seconds, make the second stirring, and then time it for 2 seconds, make the final stirring-to remove the alcohol lamp. Take a slightly wet rag prepared in advance (which has been wrung out) and gently wrap it around the side of the lower pot, so as not to make the wet rag touch the place where the alcohol lamp at the bottom of the lower pot touches the flame, so as to prevent the lower pot from breaking. At this time, you can see that the water in the upper pot is quickly "pulled" to the lower pot. If your coffee is fresh enough, there will be a lot of light brown foam in the lower pot at this time.
7. After the coffee is sucked into the lower pot, hold the upper pot in one hand, hold the handle of the lower pot in the other hand, and gently shake the upper pot from left to right to pull it out. Pour coffee into a warm cup of coffee, and then enjoy this cup of fragrant coffee prepared by yourself!

Siphon pot tends to be more insipid than filter pot, because some water in the middle tube of the upper pot does not flow into the upper pot to contact with coffee powder. In addition, because the alcohol lamp is always heated, it tends to be extracted at high temperature, so it is easy to make the bitterness or astringency excessively extracted and become stronger. The solution is to stir the coffee powder or completely control the extraction time.
