How to cook raw fried turtle
For one soft-shell turtle, blanch it in water of about 80℃ and peel off the skin (see here for specific processing methods). Soak in water repeatedly to rinse away the blood, then marinate with cooking wine and pepper. Slice the ginger and garlic, and cut the white and green green onions into sections.
